Mix the yeast with warm milk and let it sit for 10 minutes if you're using dry yeast.

Combine flour, sugar and salt in a large bowl or your stand mixer bowl.

Add eggs, milk-yeast mixture, and vanilla. Knead until you get a smooth dough.

Slowly work in small pieces of butter while kneading for 10-15 minutes until the dough feels smooth and stretchy.

Cover with a clean kitchen towel and let it grow in a warm spot for 1.5-2 hours, until it's twice as big.

Push air out of the dough, then make small balls or braids depending on what shape you want. Put them on a buttered pan or baking sheet with parchment paper.

Let the shaped dough rise again for 45-60 minutes.

Heat your oven to 180°C. Brush the tops with the egg yolk and milk mix. Bake for 20-25 minutes based on size until they're golden brown.
