Soft Sweet Homemade Buns (Print Version)

# Ingredients:

01 - 500 g all-purpose flour (type 45 or 55)
02 - 20 g fresh baker's yeast (or 7 g dry yeast)
03 - 80 g sugar
04 - 10 g salt
05 - 3 eggs
06 - 100 ml warm milk
07 - 100 g softened butter
08 - 1 tsp vanilla extract (or orange blossom water, optional)
09 - 1 egg yolk + 1 tbsp milk (for brushing)

# Instructions:

01 - Mix the yeast with warm milk and let it sit for 10 minutes if you're using dry yeast.
02 - Combine flour, sugar and salt in a large bowl or your stand mixer bowl.
03 - Add eggs, milk-yeast mixture, and vanilla. Knead until you get a smooth dough.
04 - Slowly work in small pieces of butter while kneading for 10-15 minutes until the dough feels smooth and stretchy.
05 - Cover with a clean kitchen towel and let it grow in a warm spot for 1.5-2 hours, until it's twice as big.
06 - Push air out of the dough, then make small balls or braids depending on what shape you want. Put them on a buttered pan or baking sheet with parchment paper.
07 - Let the shaped dough rise again for 45-60 minutes.
08 - Heat your oven to 180°C. Brush the tops with the egg yolk and milk mix. Bake for 20-25 minutes based on size until they're golden brown.
09 - Let them cool on a wire rack before eating.

# Notes:

01 - Make them tastier by adding chocolate chips, dried raisins or filling the center with hazelnut spread.
02 - You can make the dough at night, keep it in the fridge overnight, and shape them in the morning.
03 - They'll stay good for 2-3 days if wrapped well, and they freeze nicely too.
