Grab a bowl and add the melted butter (make sure it’s warm but not hot, so the eggs don’t cook). Toss in the sugar, then the egg yolks. Stir it all together and set it aside.

Peel the apples, scoop out the cores, and slice them thin. Place them neatly over the crust. Pour the prepared mixture right on top. Pop everything in the oven, placing it in the middle, and bake for 40 minutes. It's done when the apples are golden, and the mixture has set.

Set your oven to 200°C (conventional heat, top and bottom). Lightly dust your tart pan with some flour to keep the crust from sticking. Lay the pastry into the pan, press the edges gently with your fingers, and crimp the sides using a knife.

Poke tiny holes in the crust using a fork, so it doesn’t puff up. Once your oven’s nice and hot, bake it for about 10 to 12 minutes or until just lightly browned.
