Slice open the vanilla pods the long way and scrape the insides. Toss the inner bits into a small pan.

Using a blender or food processor, grind the emptied pods with the sugar until powdery. A little texture is fine.

Combine the blended vanilla-sugar mix, water, and glucose syrup with the vanilla insides in the pan. Let it boil, then simmer gently for around 7 to 8 minutes.

Cool the mix slightly, then blend until smooth. Spoon the vanilla paste into a clean jar. For an ultra-smooth texture, strain it before storing.
