Set your oven to 375°F (190°C) and let it warm up.

Slice the zucchinis thin and toss them in a large bowl. Drizzle olive oil on top, sprinkle with thyme, garlic, salt, and pepper. Give it all a good mix.

Spread the seasoned zucchini slices in a single layer inside a greased baking dish.

Drizzle the sour cream over the zucchini slices evenly.

Sprinkle mozzarella, Parmesan, and goat cheese all over the top.
