Thai cucumber salad (Print Version)

# Ingredients:

→ Salad

01 - A handful of fresh mint leaves
02 - A few sprigs of fresh cilantro
03 - 1 organic cucumber
04 - 1 tablespoon of crushed roasted peanuts or sesame seeds

→ Dressing

05 - 1 organic lime (half for the dressing, the other half sliced for garnish)
06 - 1 teaspoon of peanut butter
07 - 4 tablespoons of coconut milk
08 - 1 clove of garlic, crushed
09 - 2 tablespoons of fish sauce
10 - 1 teaspoon of ground ginger or 2 cm of freshly grated ginger

# Instructions:

01 - Dry the cucumber after washing it, then slice it thin. Place the slices in a large bowl.
02 - Wash the herb leaves and pat them dry. Chop them finely, then toss them in with the cucumber slices.
03 - Add all the dressing items—half the lime juice, coconut milk, fish sauce, peanut butter, garlic, and ginger—into a small jar. Stir or shake it well to bring it all together.
04 - Drizzle the dressing over the cucumber slices. Garnish with the lime slices and sprinkle either crushed peanuts or sesame seeds on top. Toss everything before digging in!
