Put your oven on and set it to 430°F. Cover a chicken breast with plastic wrap or a freezer bag, then flatten it gently using the back of a pan or a meat tenderizer. Aim for an even thickness—roughly ¾ inch.

Mix up the salt, herbs, and spices in a small bowl. Pat your chicken dry using paper towels, rub a little oil on it, and sprinkle the spice mix evenly. Press the seasoning into the meat with your hands.

Pop the chicken into the oven for 18–20 minutes, or until you see the edges starting to brown. If you’ve got a meat thermometer, make sure the internal temp hits 165°F.

After baking, throw some foil loosely over your dish and let the chicken chill for about 5 minutes. This spreads the juices around inside the meat before you slice it up.
