Stuffed Avocado with Shrimp (Print Version)

# Ingredients:

→ For the Filling

01 - 2 ripe avocados
02 - 200g cooked shrimp, peeled and cleaned
03 - 2 tablespoons mayo or Greek yogurt for a lighter option
04 - 1 tablespoon fresh lemon juice
05 - 1 tablespoon fresh chopped dill or parsley
06 - Salt and pepper to taste

→ For the Garnish

07 - Lemon wedges
08 - A few sprigs of dill or parsley
09 - Paprika or chili flakes (optional)

# Instructions:

01 - Cut avocados lengthwise and take out the pits. Gently scoop out some flesh to make the cavity bigger, and put this flesh aside in a small bowl.
02 - Lightly mash the set-aside flesh with a fork. Splash in lemon juice to keep it from turning brown and boost the flavor.
03 - Combine shrimp, mashed avocado, mayo, chopped herbs, salt and pepper in a bowl. Stir gently until everything's mixed well.
04 - Stuff each avocado half with plenty of shrimp mixture. Top with a sprig of dill or parsley for looks. If you want more color and kick, sprinkle some paprika or chili flakes on top.
