Cut avocados lengthwise and take out the pits. Gently scoop out some flesh to make the cavity bigger, and put this flesh aside in a small bowl.

Lightly mash the set-aside flesh with a fork. Splash in lemon juice to keep it from turning brown and boost the flavor.

Combine shrimp, mashed avocado, mayo, chopped herbs, salt and pepper in a bowl. Stir gently until everything's mixed well.

Stuff each avocado half with plenty of shrimp mixture. Top with a sprig of dill or parsley for looks. If you want more color and kick, sprinkle some paprika or chili flakes on top.
