Strawberry Cookie Delight (Print Version)

# Ingredients:

→ Creamy Base

01 - 4 eggs
02 - 250g mascarpone cheese
03 - 1 dash of powdered vanilla
04 - 70g sugar
05 - A small pinch of salt

→ Topping

06 - 10 speculoos cookies
07 - 500g fresh strawberries

# Instructions:

01 - Rinse the strawberries and remove the stems. Save a few for garnish and chop up the rest into little pieces. Crush the speculoos cookies into tiny crumbs.
02 - Split eggs, keeping the yolks and whites separate. Whisk the yolks with sugar until it looks pale. Stir in the mascarpone and add the vanilla.
03 - Whip the egg whites with a pinch of salt until stiff peaks form. Gently fold this into the mascarpone mixture.
04 - Layer each glass with mascarpone cream, chopped strawberries, and cookie crumbs. Do this twice, then top with half a strawberry for decoration.
05 - Pop the glasses in the fridge and chill for at least 2 hours before serving.

02 - Swap sugar with birch sugar for a lower GI option
