Rinse the strawberries and remove the stems. Save a few for garnish and chop up the rest into little pieces. Crush the speculoos cookies into tiny crumbs.

Split eggs, keeping the yolks and whites separate. Whisk the yolks with sugar until it looks pale. Stir in the mascarpone and add the vanilla.

Whip the egg whites with a pinch of salt until stiff peaks form. Gently fold this into the mascarpone mixture.

Layer each glass with mascarpone cream, chopped strawberries, and cookie crumbs. Do this twice, then top with half a strawberry for decoration.

Pop the glasses in the fridge and chill for at least 2 hours before serving.
