Spicy sweet potato fries (Print Version)

# Ingredients:

→ For the sweet potato fries

01 - 2 large sweet potatoes
02 - 2 tbsp olive oil
03 - 1 tsp garlic powder
04 - 1 tsp paprika
05 - Salt and freshly ground pepper
06 - Sea salt (to serve)
07 - Chopped fresh cilantro (optional)

→ For the avocado dip

08 - 2 minced garlic cloves
09 - 1 ripe avocado
10 - 60 ml yogurt
11 - 1 tbsp lemon juice
12 - Salt and pepper
13 - Chopped fresh cilantro

# Instructions:

01 - Heat your oven to 220°C and position the rack in the top part. Line a baking tray with parchment paper.
02 - Slice the sweet potatoes into thin, even sticks. Keeping them the same size helps them cook evenly for crispy fries.
03 - Toss the sliced sweet potatoes in a big bowl with olive oil. Sprinkle in the paprika, garlic powder, salt, and pepper, then mix it all up well.
04 - Place the fries on the tray, making sure they're spread out and not piled on top of each other.
05 - Bake for about 10-15 minutes, or until you notice the fries turning golden and crisp. Move them around and bake for an extra 10 minutes or until the edges get a little brown.
06 - For the avocado dip, start by blending garlic in a food processor or herb chopper. Add the ripe avocado, yogurt, and lemon juice, then mix until creamy and smooth. Give it some salt, pepper, and a sprinkle of chopped cilantro.
07 - Sprinkle sea salt and fresh cilantro over the fries. Serve them up with your avocado dip and enjoy!

# Notes:

01 - This dish uses 2 large sweet potatoes. If yours are on the smaller side, reduce the oil, as too much oil can stop the fries from crisping up.
02 - To get even crispier fries, toss the sweet potato sticks in a mix of 2 tbsp corn starch and 2 tbsp water before baking.
