Give the okra a good wash and dry it with a cloth to get rid of water. Snip off the ends and cut into 1-inch chunks.

Put veggie oil in a big pan and let it get hot over medium heat.

Once oil's hot, toss in those cumin seeds and wait till they start to sizzle and pop.

Throw in your chopped onions and cook them until they turn a nice golden color.

Stir in the ginger-garlic paste and let it cook for about a minute until it smells amazing.

Sprinkle turmeric, ground coriander, and chili powder on top. Stir everything together well.

Add your diced tomatoes and cook until they get soft and mix with all the spices.

Add the okra pieces and stir so they're all coated with the spicy mixture.

Cover the pan and let everything simmer for 10-12 minutes, stirring now and then until the okra gets tender.

Sprinkle garam masala on top and add salt how you like it. Give it all a good stir.

Scatter fresh cilantro on top before you serve. Pair with steamed rice, naan or roti for a full meal.
