Spicy Okra Indian Dish (Print Version)

# Ingredients:

01 - 500g fresh okra (bhindi), washed and cut into 1-inch pieces
02 - 2 tablespoons veggie oil
03 - 1 teaspoon cumin seeds
04 - 1 large onion, chopped small
05 - 2 medium tomatoes, diced tiny
06 - 1 teaspoon ginger-garlic paste
07 - 1 teaspoon turmeric powder
08 - 1 teaspoon ground coriander
09 - 1/2 teaspoon red chili powder (change to taste)
10 - 1/2 teaspoon garam masala
11 - Salt to taste
12 - Chopped fresh cilantro (for topping)

# Instructions:

01 - Give the okra a good wash and dry it with a cloth to get rid of water. Snip off the ends and cut into 1-inch chunks.
02 - Put veggie oil in a big pan and let it get hot over medium heat.
03 - Once oil's hot, toss in those cumin seeds and wait till they start to sizzle and pop.
04 - Throw in your chopped onions and cook them until they turn a nice golden color.
05 - Stir in the ginger-garlic paste and let it cook for about a minute until it smells amazing.
06 - Sprinkle turmeric, ground coriander, and chili powder on top. Stir everything together well.
07 - Add your diced tomatoes and cook until they get soft and mix with all the spices.
08 - Add the okra pieces and stir so they're all coated with the spicy mixture.
09 - Cover the pan and let everything simmer for 10-12 minutes, stirring now and then until the okra gets tender.
10 - Sprinkle garam masala on top and add salt how you like it. Give it all a good stir.
11 - Scatter fresh cilantro on top before you serve. Pair with steamed rice, naan or roti for a full meal.
