Spiced Chicken Legs (Print Version)

# Ingredients:

→ Chicken

01 - 12 chicken drumsticks

→ Yogurt marinade

02 - 1 cup plain yogurt (250ml)
03 - 1 small onion, finely chopped
04 - 2 tablespoons vegetable oil
05 - 2 teaspoons minced garlic
06 - 2 teaspoons fresh grated ginger
07 - 1 teaspoon ground coriander
08 - ½ teaspoon ground cumin
09 - 1 teaspoon chili powder
10 - 1 teaspoon paprika
11 - 1 teaspoon ground turmeric
12 - ½ teaspoon black pepper
13 - 1 teaspoon salt
14 - 2 tablespoons chopped fresh parsley
15 - Juice of 1 medium lemon (about 2 ½ tablespoons)

# Instructions:

01 - Combine all the marinade ingredients in a large mixing bowl. Stir until smooth.
02 - Add the drumsticks to the bowl. Toss them around so they're well coated. Cover the bowl and chill in the fridge for at least 4 hours or overnight. If you're short on time, make a few cuts on each drumstick to shorten the marinating process.
03 - Heat your oven to 200°C. Place the drumsticks on a rack set over a baking tray. Cook for about 45 minutes, brushing them 2-3 times with leftover marinade during baking.
04 - Using a thick-bottomed pan, sear the drumsticks over high heat until they're golden all over. Reduce the heat and cook for 30 minutes, making sure to flip them often.

# Notes:

01 - Plan for 3 drumsticks per person.
02 - You can swap drumsticks for thighs or whole legs.
03 - Feel free to tweak the spice amounts to your liking.
04 - You can take off the chicken skin if preferred.
