Soft banana muffins (Print Version)

# Ingredients:

→ Main Ingredients

01 - 76g of melted unsalted butter
02 - A pinch of salt
03 - 2 large very ripe bananas (or 3 medium ones)
04 - 135g of sugar
05 - 2 beaten eggs
06 - 1 teaspoon of pure vanilla extract

→ Dry Ingredients

07 - 187g of all-purpose flour
08 - ½ teaspoon of baking powder
09 - ½ teaspoon of baking soda

→ Optional Add-ins

10 - 125ml of coarsely chopped nuts

# Instructions:

01 - Heat the oven to 220°C. Either grease your muffin tray or line it with paper cups.
02 - Mash the bananas, then mix in the melted butter. Stir in the sugar, eggs, vanilla, and salt, followed by the baking soda, baking powder, and flour. Don’t overmix it.
03 - Pour the batter into the muffin cups. Bake initially at 220°C, then lower to 180°C. Cook for 20-30 minutes depending on your muffin size.
04 - Check if they’re done by inserting a toothpick; it should come out clean. Let them cool for 5 minutes before taking them out of the tray. Store in foil or an airtight container.

01 - Mix the batter gently for soft muffins.
02 - Baking time changes depending on how big the muffins are.
03 - Best when enjoyed warm or at room temperature.
