Heat the oven to 220°C. Either grease your muffin tray or line it with paper cups.

Mash the bananas, then mix in the melted butter. Stir in the sugar, eggs, vanilla, and salt, followed by the baking soda, baking powder, and flour. Don’t overmix it.

Pour the batter into the muffin cups. Bake initially at 220°C, then lower to 180°C. Cook for 20-30 minutes depending on your muffin size.

Check if they’re done by inserting a toothpick; it should come out clean. Let them cool for 5 minutes before taking them out of the tray. Store in foil or an airtight container.
