Set the oven to 320°F. Rub the lamb all over with olive oil, minced garlic, salt, pepper, and a sprinkle of rosemary and thyme.

Heat a heavy pot. Brown the lamb on every side for about 5-7 minutes till it gets a nice golden crust. Take it out and keep it aside.

Using the same pot, sauté the onion till soft. Stir in honey and the chicken broth, then place the lamb back in.

Cover it up and bake for 3-4 hours. Check now and then, spooning the juices over the meat until it's falling-apart tender.

Let the lamb sit for 10 minutes before cutting into it. Serve with the cooking juices poured on top.
