Simmered veggies in tomato (Print Version)

# Ingredients:

→ Vegetables

01 - 3 carrots
02 - 12 small potatoes or 6 medium ones
03 - 400-500 g frozen or fresh peas

→ Seasonings

04 - 2 garlic cloves
05 - 1 onion
06 - 1 can of peeled tomatoes
07 - A sprinkle of salt and pepper
08 - 1 tablespoon sweet paprika
09 - 2 tablespoons olive oil

→ Broth and Herbs

10 - Fresh parsley or cilantro to top it off
11 - 1 herb bundle (bay leaf, parsley)
12 - 250 ml vegetable stock or water

# Instructions:

01 - Chop onions, garlic, potatoes, and carrots. Crush the tomatoes for later use.
02 - Heat up the olive oil and sauté the onions, garlic, and carrots.
03 - Toss in the peas and spices, cooking for 5 minutes. Then mix in the potatoes, tomatoes, and herb bundle.
04 - Pour in the broth, cover, and gently cook for 25 minutes until all veggies are soft.
05 - Double-check everything is cooked through. Adjust the sauce if needed and sprinkle fresh herbs before serving.

# Notes:

01 - Want to add meat? Brown it with the onion at the start.
02 - Spice it up a bit by mixing in a little harissa.
03 - Using a pressure cooker can save you some time.
