Put the gelatin powder in 50g of cold water in a small bowl. Mix well and let it sit for about 5 minutes until it swells up.

Mix the sugar, water and liquid cream in a pot. Heat on medium until it starts to simmer gently.

Take the pot off the heat and put in the swollen gelatin. Stir until it's completely dissolved.

Put the chopped dark chocolate into the hot mixture. Stir until you get a smooth texture.

Add corn syrup if you want your glaze to look shinier.

Let your glaze cool to around 32°C before you use it.

Pour the cooled glaze evenly over your dessert for a perfect mirror finish.
