Chocolate mirror glaze (Print Version)

# Ingredients:

→ Chocolate Glaze

01 - 200g dark chocolate (or milk chocolate)
02 - 100g sugar
03 - 100g water
04 - 100g liquid cream
05 - 10g gelatin powder (or agar-agar)
06 - 1 tablespoon corn syrup (optional)

# Instructions:

01 - Put the gelatin powder in 50g of cold water in a small bowl. Mix well and let it sit for about 5 minutes until it swells up.
02 - Mix the sugar, water and liquid cream in a pot. Heat on medium until it starts to simmer gently.
03 - Take the pot off the heat and put in the swollen gelatin. Stir until it's completely dissolved.
04 - Put the chopped dark chocolate into the hot mixture. Stir until you get a smooth texture.
05 - Add corn syrup if you want your glaze to look shinier.
06 - Let your glaze cool to around 32°C before you use it.
07 - Pour the cooled glaze evenly over your dessert for a perfect mirror finish.
