Shred the zucchini and potatoes, wrap them in a cloth, and squeeze out the liquid.

Mix the flour, grated cheese, egg, chopped parsley, milk, and olive oil in a large bowl.

Warm up a greased waffle mold.

Scoop two spoonfuls of batter onto the mold, place a mozzarella slice on top, and cover with more batter. Close it up and cook for around 5–7 minutes.

Enjoy warm! Add some tomato sauce if that's your thing.
