Savory Tuna Stew (Print Version)

# Ingredients:

→ For the Stew

01 - 1/4 teaspoon of black pepper
02 - 1/2 teaspoon of dried thyme
03 - 400g of fresh tuna, cut into large chunks
04 - 2 medium potatoes, peeled and chopped into pieces
05 - 4 cups of fish or vegetable stock
06 - 1 red bell pepper, diced
07 - 1 green bell pepper, diced
08 - 1 teaspoon of smoked paprika
09 - 2 ripe tomatoes, grated or finely chopped
10 - 1 onion, finely minced
11 - 1 bay leaf
12 - 1/2 teaspoon of salt
13 - 2 garlic cloves, thinly sliced
14 - 2 tablespoons of olive oil

# Instructions:

01 - Heat up the olive oil in a big pot over medium heat. Toss in the garlic, onion, and peppers. Let them cook for about 5 minutes until they soften up. Stir in the smoked paprika, tomatoes, salt, thyme, and black pepper. Keep cooking until the tomatoes break down, about 5 minutes.
02 - Pop the potato chunks in the pot and cook for 2 minutes. Pour in the fish or veggie stock, toss in the bay leaf, and bring it all to a boil. Lower the heat and let it simmer for around 20-25 minutes until the potatoes are soft.
03 - Add the tuna chunks to the stew and let them cook for 3-5 minutes until just done. Taste and adjust the salt or pepper if it needs it. Don’t forget to take out the bay leaf before serving.
