Set your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.

Melt the butter over medium heat in a frying pan. Stir in the sliced onions. Keep cooking and stirring until they’re golden and caramelized, around 10 minutes. Set aside to cool for a bit.

In a big bowl, combine the ground meat, breadcrumbs, Parmesan, egg, garlic, thyme, rosemary, salt, and pepper. Toss in the caramelized onions and mix everything together well.

Spoon the meat mixture into the prepared loaf pan and mold it into a loaf shape.

Pop it into the preheated oven and bake for 45 minutes to 1 hour, or until the loaf hits an internal temperature of 160°F (71°C).

When the meatloaf is done, sprinkle the Gruyere cheese on top.

Return the meatloaf to the oven for another 5 minutes, just long enough for the cheese to melt and bubble.
