Salmon poke flavors (Print Version)

# Ingredients:

→ For the base

01 - 1 cup of mixed greens or spinach
02 - 2 cups of cooked white or brown rice

→ For the protein

03 - 1/2 tsp of grated ginger
04 - 1 tsp of sesame oil
05 - 2 tbsp of soy sauce
06 - 1 tsp of honey or agave syrup
07 - 200g of fresh salmon or tuna, diced

→ For the toppings

08 - 2 tbsp of sesame seeds
09 - 1/4 cup of edamame
10 - 1 finely sliced cucumber
11 - 1 carrot, cut into thin sticks
12 - 2 green onions, chopped
13 - 1 avocado, sliced

→ For the sauce

14 - 1 tsp of sriracha (adjust spice as needed)
15 - 2 tbsp of mayo

# Instructions:

01 - Follow the package directions to cook the rice. Let it cool slightly before using.
02 - Start by adding a bed of greens or spinach to your bowl, then spoon the cooked rice over it.
03 - Mix together soy sauce, sesame oil, honey, and grated ginger in a bowl. Let the cubed fish sit in this marinade for about 10 minutes.
04 - Slice the cucumber and avocado, cut the carrot into sticks, and chop the green onions.
05 - Arrange the marinated fish, avocado, cucumber, carrot, and edamame over the rice and greens.
06 - Stir together the mayo and sriracha. Pour the sauce over your assembled bowl.
07 - Sprinkle on sesame seeds and chopped green onions to finish it up.

# Notes:

01 - Swap the fish for marinated tofu or grilled veggies to make it vegetarian.
02 - Everything can be prepped ahead of time so it's ready to put together when you need it.
