Quinoa Pizza Veggies Rabbit (Print Version)

# Ingredients:

→ For the Quinoa Crust

01 - 1 large egg
02 - 1 tablespoon olive oil
03 - 1/2 cup cooked quinoa
04 - 1 cup quinoa flour
05 - 1/4 teaspoon dried oregano
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon salt
08 - 1 teaspoon baking powder

→ For the Toppings

09 - 1/2 cup shredded mozzarella cheese
10 - 1 tablespoon fresh basil, chopped (optional)
11 - 1/2 cup zucchini slices
12 - 1/4 cup pitted and sliced black olives
13 - 1/4 cup thinly sliced red onions
14 - 1/2 cup sliced bell peppers (yellow or red)
15 - 1/2 pound cooked and shredded rabbit meat
16 - 1/2 cup tomato sauce

# Instructions:

01 - Heat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Combine quinoa flour, cooked quinoa, egg, olive oil, baking powder, salt, garlic powder, and oregano in a bowl. Stir until you get a dough-like consistency. Move the dough onto the parchment-lined sheet and press it into a round pizza shape, about 1.5 cm thick. Bake it for 15-20 minutes, or until it’s golden and slightly firm. Pull it out of the oven and let it rest for 5 minutes to cool.
02 - Spread the tomato sauce evenly over the crust. Arrange the shredded rabbit meat, zucchini, bell peppers, onions, and olives on top. Sprinkle the mozzarella cheese all over. Place the pizza back in the oven and bake for 10-15 more minutes, until the cheese is melted and bubbly.
03 - If you’re using fresh basil, scatter it over the top to add a burst of flavor. Cut the pizza into 4 slices and enjoy straight away.

02 - Feel free to swap rabbit for chicken for a more common choice.
