Savory Chicken Puttanesca (Print Version)

# Ingredients:

→ For the chicken

01 - 1 teaspoon of dried oregano
02 - Salt and pepper to taste
03 - 4 boneless and skinless chicken breasts
04 - 1 tablespoon of olive oil

→ For the puttanesca sauce

05 - Fresh basil for topping
06 - 1/2 teaspoon of sugar
07 - 1/4 cup of pitted black olives, thinly sliced
08 - 1 tablespoon of capers
09 - 1 handful of red chili flakes (optional)
10 - 1/2 teaspoon of dried oregano
11 - 1 can (400g) of crushed tomatoes
12 - 3 minced garlic cloves
13 - 1 tablespoon of olive oil

# Instructions:

01 - Heat up a tablespoon of olive oil over medium-high heat in a big skillet. Sprinkle some salt, pepper, and dried oregano on the chicken breasts. Place the chicken in the hot skillet and cook for 6-8 minutes on each side until browned and thoroughly cooked (internal temperature should hit 165°F). Take it off the stovetop and set aside.
02 - Using the same pan, warm up a tablespoon of olive oil. Sauté the garlic until it’s fragrant, about a minute. Stir in the crushed tomatoes, black olives, capers, chili flakes, oregano, and sugar. Let it simmer for 6-8 minutes so it thickens and all the flavors blend together. Adjust the taste by adding more salt, pepper, or chili flakes if needed.
03 - Put the cooked chicken back into the skillet with the sauce. Spoon some sauce over the chicken. Simmer everything together for another 5 minutes so the chicken gets infused with all that rich flavor.
