Fluffy potato blinis (Print Version)

# Ingredients:

→ Blinis Batter

01 - 2 tablespoons milk
02 - 1 egg
03 - 1 pinch baking powder
04 - 40 g flour
05 - 200 g steamed potatoes, mashed with a fork
06 - 1 teaspoon garlic powder
07 - Vegetable oil, neutral flavor
08 - Salt and freshly ground pepper

→ Toppings

09 - Smoked trout
10 - Thick cream
11 - Finely chopped dill
12 - Zest from organic lemon
13 - 5-pepper mix

# Instructions:

01 - Peel and rinse the potatoes well. Steam them till soft, then let them cool a bit.
02 - Mash the cooled potatoes with a fork. Combine with the flour, egg, and baking powder. Pour in the milk, stir in garlic powder, a teaspoon of oil, and season with salt and pepper. Stir until smooth.
03 - Set the batter aside for 10 minutes to rest.
04 - Heat a lightly oiled skillet. Spoon small amounts of batter onto the pan and cook for 2–3 minutes. Flip carefully, then cook another 1–2 minutes till golden.
05 - Arrange the cooked blinis on a plate. Add a dollop of thick cream, slices of smoked trout, a sprinkle of lemon zest, finely chopped dill, and some 5-pepper spice.

# Notes:

01 - Mashing the potatoes while warm makes mixing the batter much easier.
