Whisk the butter and sugar until smooth in a bowl. Toss in the eggs and vanilla. Blend the flours and spices separately, then combine everything together.

Split the dough into two flat rounds. Wrap them with plastic wrap and chill for 2 hours.

Roll out the dough until it’s about 0.3 cm thick. Use cookie cutters to make full shapes and ones with a hole in the middle.

Bake at 180°C for 10-12 minutes, just until the edges start turning golden.

After cooling, spread jam on one whole cookie. Dust a holed cookie with powdered sugar, then sandwich them together.
