Linzer Cookies Holiday Treat (Print Version)

# Ingredients:

→ Dough for cookies

01 - Almond flour
02 - All-purpose flour
03 - Unsalted butter
04 - Ground cinnamon
05 - Sugar
06 - Egg yolks or whole egg
07 - Pure vanilla extract

→ Filling and toppings

08 - Jam (smooth type works best)
09 - Powdered sugar (optional)

# Instructions:

01 - Whisk the butter and sugar until smooth in a bowl. Toss in the eggs and vanilla. Blend the flours and spices separately, then combine everything together.
02 - Split the dough into two flat rounds. Wrap them with plastic wrap and chill for 2 hours.
03 - Roll out the dough until it’s about 0.3 cm thick. Use cookie cutters to make full shapes and ones with a hole in the middle.
04 - Bake at 180°C for 10-12 minutes, just until the edges start turning golden.
05 - After cooling, spread jam on one whole cookie. Dust a holed cookie with powdered sugar, then sandwich them together.
