Season your sole fillets with salt and pepper. Gently coat them in flour, making sure to shake off any extra.

Warm up the olive oil with a tbsp of butter in a big pan over medium heat. Cook the sole for about 2-3 minutes on each side until they turn golden and are fully cooked. Carefully take them out and keep them warm.

Using the same pan, melt the remaining tbsp of butter. Pour in the lemon juice and add the peel, scraping the bottom to mix in all the tasty bits. Let it bubble for a minute or two.

Put the sole on serving plates. Drizzle the lemon mixture over the fish and sprinkle with the chopped parsley. Serve right away.
