Crispy Fried Shrimp (Print Version)

# Ingredients:

→ Shrimp

01 - Large raw shrimp (300 g)

→ Tempura Batter

02 - Cold sparkling water (60 ml)
03 - All-purpose flour (60 g)
04 - Egg yolk (1 whole)

→ Coating and Seasoning

05 - Panko breadcrumbs (60 g)
06 - Salt (to taste)
07 - Black pepper (to taste)

→ For Frying

08 - Frying oil (1 liter)

# Instructions:

01 - Take off the shrimp head by twisting it gently, and peel off the shells but leave the tails. Give them a rinse and pat dry.
02 - Cut shallow slits along the belly, press lightly, and make a small cut on the back to remove the vein.
03 - Whisk the egg yolk, slowly blend in the sparkling water, and then stir in the flour. Sprinkle some salt and pepper for taste.
04 - Heat oil to 180°C. Dip each shrimp in the batter, coat with Panko, and fry in small batches (two at a time) until golden brown.
