Take off the shrimp head by twisting it gently, and peel off the shells but leave the tails. Give them a rinse and pat dry.

Cut shallow slits along the belly, press lightly, and make a small cut on the back to remove the vein.

Whisk the egg yolk, slowly blend in the sparkling water, and then stir in the flour. Sprinkle some salt and pepper for taste.

Heat oil to 180°C. Dip each shrimp in the batter, coat with Panko, and fry in small batches (two at a time) until golden brown.
