Homemade strawberry ice sandwich (Print Version)

# Ingredients:

→ For the cookies

01 - 1 1/2 cups all-purpose flour
02 - 1/2 cup softened unsalted butter
03 - 1/4 cup sugar
04 - 1 egg
05 - 1/2 teaspoon vanilla extract
06 - 1/2 teaspoon baking soda

→ For the filling

07 - 2 cups strawberry ice cream (store-bought or homemade)

# Instructions:

01 - Warm your oven to 175°C (350°F). Line your baking sheet with parchment paper.
02 - Beat butter and sugar in a large bowl until fluffy and light. Mix in the egg and vanilla extract thoroughly. Slowly add flour and baking soda, stirring until you get smooth dough.
03 - Scoop tablespoon-sized portions of dough and roll them into balls. Put them on your lined baking sheet about 5 cm apart.
04 - Pop them in the hot oven for 8-10 minutes or until the edges turn golden brown.
05 - Take them out and let the cookies cool completely on a wire rack.
06 - After cookies are totally cool, scoop a big dollop of strawberry ice cream onto the flat side of one cookie.
07 - Put another cookie on top, flat side down. Press gently to make a sandwich with ice cream trapped between cookies.
08 - Set your finished sandwiches on a parchment-lined tray and stick them in the freezer for at least an hour so the ice cream firms up.
