Warm your oven to 175°C (350°F). Line your baking sheet with parchment paper.

Beat butter and sugar in a large bowl until fluffy and light. Mix in the egg and vanilla extract thoroughly. Slowly add flour and baking soda, stirring until you get smooth dough.

Scoop tablespoon-sized portions of dough and roll them into balls. Put them on your lined baking sheet about 5 cm apart.

Pop them in the hot oven for 8-10 minutes or until the edges turn golden brown.

Take them out and let the cookies cool completely on a wire rack.

After cookies are totally cool, scoop a big dollop of strawberry ice cream onto the flat side of one cookie.

Put another cookie on top, flat side down. Press gently to make a sandwich with ice cream trapped between cookies.

Set your finished sandwiches on a parchment-lined tray and stick them in the freezer for at least an hour so the ice cream firms up.
