To get the chicken ready for cooking, take it out of the fridge 30 minutes before so it's closer to room temperature.

Cut the fillets into strips about 2 cm thick. Season with salt and pepper on both sides.

Get three bowls ready. Put flour in the first, whisked eggs in the second, and breadcrumbs in the last one.

Dip the chicken pieces in the flour, then coat them in the egg mixture, and finish with breadcrumbs. For an extra thick, crispy layer, you can re-dip them in egg and breadcrumbs again.

Heat your oil in a pan on high. Place the chicken nuggets in the hot oil and cook for 2 to 3 minutes on each side until nicely browned.

Turn the heat down and let the chicken cook a little longer. Flip them occasionally so they cook evenly through.
