Homemade Amaretti Cookies (Print Version)

# Ingredients:

01 - 1 room-temperature egg
02 - 80 g powdered sugar
03 - 125 g almond flour
04 - 40 g sifted flour
05 - 1 tablespoon natural bitter almond extract
06 - A pinch of salt

# Instructions:

01 - Divide the egg yolk and white into two separate bowls.
02 - Whisk the egg whites with a little salt until stiff peaks form.
03 - Mix the egg yolk and powdered sugar until smooth and creamy.
04 - Carefully fold the stiff egg whites into the yolk mixture.
05 - Gently stir in the almond flour, sifted flour, and bitter almond extract until everything’s well combined.
06 - Let the dough rest in the fridge for 10 minutes.
07 - Set your oven to 180°C and let it heat up.
08 - Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
09 - Bake for about 15 minutes, or until the cookies are lightly golden.
