Hearty Minced Stew (Print Version)

# Ingredients:

→ Main Ingredients

01 - 500g ground beef
02 - 700g firm potatoes, peeled
03 - 2 bell peppers (yellow and red)
04 - 500ml beef stock
05 - 1 red onion
06 - 3 garlic cloves
07 - 2 tablespoons olive oil
08 - 3 tablespoons tomato paste

→ Spices

09 - 2 teaspoons sweet paprika
10 - 1 teaspoon spicy paprika
11 - Fresh parsley, a small handful
12 - Salt and pepper
13 - 2 teaspoons Provence herbs

→ Optional

14 - Cornstarch for thickening

# Instructions:

01 - Chop your onion into tiny pieces, dice the potatoes into 1-2cm cubes, and mince the garlic. Remove seeds from the peppers and cut them into small bits.
02 - Warm up the olive oil in a big pan or pot. Toss in the ground beef, breaking it apart into crumbles as it cooks.
03 - Mix the onion into the browned beef, then stir in the tomato paste. Squeeze in the garlic and cook the mix for about 5 minutes.
04 - Drop the potatoes, cut peppers, and your chosen spices into the pot. Give everything a toss for a couple of minutes so it's coated evenly.
05 - Pour in the beef broth, put a lid on the pot, and let it gently simmer for 20 to 25 minutes until the potatoes are soft.
06 - Taste the dish and adjust the seasoning. If you'd like it thicker, stir in a mix of cornstarch and water. Sprinkle fresh parsley over the top and serve it warm.

# Notes:

01 - This hearty dish comes together fast without using processed ingredients.
02 - Cooking tomato paste slightly boosts its flavor for a tastier outcome.
03 - Feel free to thicken the stew a bit by adding some cornstarch mixed with water.
04 - Leftovers are even better the next day, as the flavors deepen over time.
