Healthy banana cake (Print Version)

# Ingredients:

01 - 1 plain yogurt
02 - 3 very ripe bananas for the batter (about 320-330g without peel)
03 - 1 extra ripe banana for topping (optional)
04 - 3 whole eggs
05 - Half a yogurt container of coconut sugar
06 - 1 container of T55 flour
07 - 1 container of whole wheat T150 flour
08 - 15g baking powder
09 - 70g dark chocolate (70% cocoa)
10 - 10g butter (for greasing the pan)

# Instructions:

01 - Turn your oven on and set it to 190ºC to preheat.
02 - Take 3 bananas, peel them, and mash them thoroughly with a fork in a bowl.
03 - In a big mixing bowl, combine the mashed bananas and yogurt (don’t toss the pot—it’ll be your measuring tool). Whisk in the eggs.
04 - Pour in the coconut sugar, both flours, and baking powder. Stir it all up again until smooth.
05 - Chop the dark chocolate roughly into pieces or use chocolate chips. Stir them into the batter.
06 - Butter and flour your loaf pan. Pour the batter in, then place the last banana (sliced lengthwise) on top, cut-side facing up.
07 - Pop the pan into the oven and bake for around 40 minutes. It’s done when a knife blade comes out clean.
08 - Once it’s baked, remove it from the oven. Take it out of the pan and let it cool on a rack. It’s great warm or totally cooled down!

# Notes:

01 - Reuse the yogurt pot as a measuring tool for the sugar and flours.
02 - The riper your bananas (brown spots are good), the tastier your banana bread will be.
