Fresh Chicken Salad (Print Version)

# Ingredients:

→ For the bowl

01 - 1 cup of diced red pepper
02 - 1 cup of pineapple chunks (fresh or canned)
03 - ½ cup of diced red onion
04 - 2 cups of shredded cooked chicken
05 - ½ cup of diced celery
06 - Optional: ¼ cup of chopped cilantro

→ For the dressing

07 - 1 tablespoon of apple cider vinegar
08 - 2 tablespoons of Greek yogurt
09 - ½ cup of mayonnaise
10 - 1 tablespoon of honey
11 - ½ teaspoon of Dijon mustard
12 - Pepper and salt as needed

# Instructions:

01 - If working with raw chicken, cook it in a skillet or bake it till it's done, then shred it with two forks.
02 - Allow the shredded chicken to sit for a few moments to cool before tossing it in the mix.
03 - In a small bowl, blend the Greek yogurt, mayo, honey, apple vinegar, Dijon, and seasonings together into a smooth sauce.
04 - In a big bowl, toss together the cooked chicken, pineapple chunks, diced red peppers, celery, and onion.
05 - Drizzle the dressing over the salad ingredients and gently mix until everything is coated well.
06 - Sprinkle some chopped cilantro on top (if you'd like) and enjoy it chilled.
