Grilled sardines fresh salad (Print Version)

# Ingredients:

→ Sardines

01 - 8 fresh sardines, cleaned and scaled
02 - 2 tablespoons olive oil
03 - Juice from 1 lemon
04 - 2 garlic cloves, minced
05 - 1 teaspoon paprika
06 - Salt and pepper as needed

→ Salad

07 - 2 cups mixed greens (spinach, arugula, lettuce)
08 - 2 tomatoes, diced
09 - 1 cucumber, sliced
10 - 1 small red onion, thinly sliced
11 - 1/4 cup black olives
12 - Juice from 1 lemon
13 - 2 tablespoons olive oil
14 - Salt and pepper as needed

# Instructions:

01 - Mix up olive oil, garlic, lemon juice, paprika, salt, and pepper in a bowl. Coat the sardines in this mixture, then set them aside for 10 minutes.
02 - Turn on your grill or heat up a grill pan over medium-high heat.
03 - Put the sardines on the grill and cook them for 3-4 minutes on each side until they're golden and fully cooked through.
04 - Toss the greens, cucumber, tomatoes, onion, and olives together in a large bowl.
05 - Combine the olive oil, lemon juice, salt, and pepper by whisking them together.
06 - Pour the dressing onto the salad and give it a good mix.
07 - Arrange the salad on a serving dish and lay the grilled sardines on top.
08 - Serve with extra lemon wedges on the side.
