Garlic and Parmesan Pasta (Print Version)

# Ingredients:

→ Main components

01 - 400 g pasta (try spaghetti, linguine or fettuccine)
02 - 4 cloves garlic, finely chopped
03 - 50 g butter
04 - 2 tablespoons extra virgin olive oil
05 - 100 g grated parmesan cheese
06 - 1 bunch fresh chopped parsley
07 - Salt and freshly ground black pepper

08 - 1 dash Espelette pepper
09 - Lemon zest

# Instructions:

01 - Boil pasta in a big pot of salted water following package directions. Drain but save a cup of the cooking water to thin the sauce later if needed.
02 - Melt butter with olive oil in a large pan over medium heat. Toss in minced garlic and cook gently for 1-2 minutes, making sure it doesn't burn.
03 - Put drained pasta straight into the pan with garlic. Mix in grated parmesan, chopped parsley, salt and pepper. Add a splash of the saved cooking water if you want a creamier sauce.
04 - Dish up while hot, sprinkle some Espelette pepper and lemon zest on top to boost flavor. Add extra parmesan before bringing to the table.

# Notes:

01 - Switch butter for olive oil to make it lighter.
02 - Throw in some grilled shrimp or chicken to turn this into a complete meal.
03 - A squeeze of fresh lemon juice can add a nice tangy kick.
