Cut chicken into even-sized chunks.

Combine olive oil, lemon juice, garlic, parmesan, mixed herbs, salt and pepper in a large bowl.

Toss chicken pieces in the mixture until fully coated. Cover and let sit in the fridge for at least 1 hour.

Thread the marinated chicken pieces onto skewers.
