Florentine Leek Pizza (Print Version)

# Ingredients:

→ For the pizza

01 - 1 pizza dough (store-bought or homemade)
02 - ½ cup ricotta cheese
03 - 1 ½ cups shredded mozzarella cheese
04 - 1 ½ cups fresh spinach, chopped
05 - 2 leeks, thinly sliced
06 - 2 garlic cloves, minced
07 - 1 tablespoon olive oil
08 - Salt and pepper, to taste
09 - Red pepper flakes (optional, for topping)

# Instructions:

01 - Toss the spinach in the pan and cook for just 2-3 minutes until it's soft and wilted. Add a sprinkle of salt and pepper, then set aside and take the pan off the heat.
02 - Warm up the olive oil in a pan on medium heat. Throw in the sliced leeks and minced garlic, then stir everything around for 4-5 minutes until they're soft and smell great.
03 - Set your oven to 475°F (245°C) and let it heat up. Roll out the pizza dough to your preferred thickness on a floured countertop.
04 - Spread the leek and spinach mixture evenly across the pizza dough. Drop dollops of ricotta here and there, followed by a layer of shredded mozzarella.
05 - Pop the pizza into the oven and bake it for 12 to 15 minutes. Keep an eye on it—you want the crust golden and the cheese all bubbly and melted.
06 - Take the pizza out and sprinkle on some red pepper flakes if you're feeling adventurous. Slice it up and enjoy!
