Crispy smashed potatoes (Print Version)

01 - 2 pounds of firm potatoes (small varieties like fingerlings work best)
02 - 3 tablespoons olive oil
03 - Salt
04 - Pepper
05 - Mild paprika

# Instructions:

01 - Heat your oven to 400°F (200°C) on the fan setting. Line a baking tray with parchment paper.
02 - Thoroughly wash the potatoes and boil them whole, skins on, in salted water for about 15 minutes. Skip this if you’ve already got cooked potatoes handy from the day before.
03 - Arrange the cooked potatoes on the lined tray. Gently flatten them using a potato masher or the bottom of a bottle. Press lightly to smash but not completely break them apart.
04 - Drizzle a little olive oil over the smashed potatoes or use an oil spray. Sprinkle on some salt, pepper, and a dash of paprika.
05 - Bake the potatoes for 25-30 minutes. You want the edges crispy and golden brown.
