Creamy Tortellini Dish (Print Version)

01 - 400ml heavy cream
02 - 2 egg yolks
03 - 200g ham
04 - 1 tsp butter
05 - 1 tbsp oil
06 - A pinch of nutmeg
07 - 300g fresh green asparagus
08 - 400g fresh tortellini
09 - 60g grated parmesan
10 - 2 cloves garlic
11 - Salt and pepper to taste

# Instructions:

01 - Chop the asparagus into 3 cm sections after removing the tough ends. Mince the garlic, and slice the ham into thin strips.
02 - Cook the tortellini by following the instructions on the packaging.
03 - Warm up the oil in a skillet, toss in the asparagus, and stir-fry it for a couple of minutes. Add the garlic, ham, and butter, and cook everything for another minute.
04 - Pour 200ml of cream into the skillet, bring it to a gentle simmer, and add the cooked tortellini. Let them soak in the sauce over low heat.
05 - Combine the remaining cream, egg yolks, parmesan, nutmeg, salt, and pepper in a bowl until smooth.
06 - Pour the egg-and-cheese mix into the skillet with the tortellini. Heat it on very low for a minute to thicken the sauce. Get it on the table while it's piping hot!

01 - This dish combines creamy pasta with the fresh crunch of asparagus.
02 - Make sure to use low heat when adding the egg mix to avoid scrambling.
