Chop the asparagus into 3 cm sections after removing the tough ends. Mince the garlic, and slice the ham into thin strips.

Cook the tortellini by following the instructions on the packaging.

Warm up the oil in a skillet, toss in the asparagus, and stir-fry it for a couple of minutes. Add the garlic, ham, and butter, and cook everything for another minute.

Pour 200ml of cream into the skillet, bring it to a gentle simmer, and add the cooked tortellini. Let them soak in the sauce over low heat.

Combine the remaining cream, egg yolks, parmesan, nutmeg, salt, and pepper in a bowl until smooth.

Pour the egg-and-cheese mix into the skillet with the tortellini. Heat it on very low for a minute to thicken the sauce. Get it on the table while it's piping hot!
