Creamy Pesto Salmon (Print Version)

# Ingredients:

→ For the pesto sauce

01 - 1 tablespoon of grated Parmesan cheese
02 - 1/2 cup of heavy cream
03 - 1/4 cup of store-bought or homemade pesto

→ For the salmon

04 - 4 salmon fillets (about 170g each)
05 - Salt and pepper to taste
06 - 1 tablespoon of olive oil

# Instructions:

01 - Lay the cooked salmon fillets onto plates for serving. Drizzle the warm creamy pesto sauce over the top. Sprinkle some extra Parmesan or a few fresh herbs if you'd like.
02 - Lower the heat to medium in the same pan. Stir in the pesto, heavy cream, and Parmesan cheese. Let it simmer for a couple of minutes until the sauce is warm and slightly thicker. Taste it, then adjust with salt or pepper if needed.
03 - Heat olive oil in a large skillet over medium-high heat. Season both sides of the salmon fillets with a good pinch of salt and pepper. Put the salmon in the pan with the skin side down. Cook it for 4-5 minutes on each side until it flakes easily with a fork. Once done, take the fillets out of the pan and set them aside.

# Notes:

01 - This comes together in under 30 minutes, perfect for a quick weekday meal.
02 - Want a fresher taste? Go for homemade pesto instead of store-bought.
