Creamy Chicken Mash (Print Version)

# Ingredients:

→ For the chicken

01 - Chicken breast - 320 g
02 - Button mushrooms - 140 g
03 - Yellow onion - 130 g
04 - Heavy cream - 100 ml
05 - Organic vegetable stock powder - 5 g
06 - Salt - to taste

→ For the mashed potatoes

07 - Potatoes - 900 g
08 - Raclette cheese - 55 g
09 - Clarified butter (ghee) - 10 g
10 - Salt - to taste

# Instructions:

01 - Peel and chop the potatoes into chunks. Steam them until they're soft. Blend or mash them while hot with the raclette cheese and ghee until smooth. Set aside for later.
02 - Peel the onion and cut it into thin slices. Heat a drizzle of olive oil in a pan and sauté the onion. Toss in sliced mushrooms and let them cook for a bit. Add the chicken pieces and brown them slightly before taking them out for now.
03 - Pour heavy cream into the pan, along with the crumbled vegetable stock. Stir it together until you’ve got a light, creamy sauce. Put the chicken back in and let it finish cooking gently over low heat.
04 - Scoop a good serving of mashed potatoes onto each plate. Place the chicken pieces on top and ladle over the mushroom sauce. Sprinkle with a little fresh parsley for a garnish. Serve right away.
