In another large bowl, use an electric mixer to beat the egg whites with the salt until they're stiff, but not dry.

Gently fold the beaten egg whites into the coconut mixture until everything is blended.

Scoop about 2 tablespoons of the dough, roll into balls, and place them on a baking sheet lined with parchment paper, spacing by an inch.
