Grab a big bowl and stir together the oats and cocoa powder. Toss in the honey, cashew butter, and vanilla. Stir well until it's all combined. If you’re using them, mix in the chocolate chips and cashew nuts. If the dough feels too dry, add some warm water, just a spoon or two at a time.

Press the mixture firmly into a 26x20 cm or 23x23 cm dish lined with parchment paper. Pop it in the freezer for about 30 minutes.

Take the dish out of the freezer and cut the mixture into individual bars. Wrap each piece in parchment paper or put them into a freezer bag, leaving a little space between each bar. Store in the fridge for up to a week or in the freezer for as long as a month.
