Cocoa Cereal Bars (Print Version)

01 - 180g of rolled oats
02 - 30g of unsweetened cocoa powder
03 - 250g of cashew butter
04 - 175g of honey
05 - 1 tsp of vanilla extract
06 - 40g of mini chocolate chips (optional)
07 - 2 tbsp of cashew nuts, halved (optional)
08 - Melted chocolate for topping (optional)

# Instructions:

01 - Grab a big bowl and stir together the oats and cocoa powder. Toss in the honey, cashew butter, and vanilla. Stir well until it's all combined. If you’re using them, mix in the chocolate chips and cashew nuts. If the dough feels too dry, add some warm water, just a spoon or two at a time.
02 - Press the mixture firmly into a 26x20 cm or 23x23 cm dish lined with parchment paper. Pop it in the freezer for about 30 minutes.
03 - Take the dish out of the freezer and cut the mixture into individual bars. Wrap each piece in parchment paper or put them into a freezer bag, leaving a little space between each bar. Store in the fridge for up to a week or in the freezer for as long as a month.

# Notes:

01 - You can trade out cashew butter for peanut butter if you like.
02 - The chocolate chips are totally optional since the cocoa already gives the bars a chocolatey taste.
