Chicken Soft Tacos (Print Version)

# Ingredients:

→ For the chicken

01 - 3½ pounds of boneless, skinless chicken thighs or breasts
02 - 1 cup of chicken stock or plain water
03 - A 10-ounce can of diced tomatoes with green chiles
04 - One medium onion, diced
05 - Three minced garlic cloves
06 - 1 packet of store-bought or homemade taco seasoning
07 - 1 teaspoon of smoked paprika (optional for extra flavor)
08 - ½ teaspoon of salt (adjust it to your preference)

→ For the tacos

09 - 8-10 taco shells (soft or crunchy)
10 - Toppings: shredded lettuce, chopped tomatoes, grated cheese, sour cream, sliced avocado, salsa, or any you like

# Instructions:

01 - Coat the chicken evenly with taco seasoning, salt, and smoked paprika if you're adding it.
02 - Start with the chopped onion and garlic spread on the bottom of the slow cooker. Lay the seasoned chicken on top, followed by the diced tomatoes and chicken broth.
03 - Put the lid on and let it cook for 4-5 hours on low or 2-3 hours on high until the chicken softens.
04 - Take the chicken out of the slow cooker and pull it apart using two forks. Stir it back into the sauce and let it sit for 10-15 minutes to soak up all the flavors.
05 - Heat the taco shells in a skillet, oven, or microwave until soft and warm to your liking.
06 - Fill each taco with shredded chicken and pile on your favorite toppings. Serve right away and enjoy!
