Easy chicken apricots (Print Version)

# Ingredients:

→ For the Chicken

01 - 4 skinless, boneless chicken breasts
02 - 1 teaspoon ground cumin (optional)
03 - Salt and pepper to your liking
04 - 1 tablespoon olive oil

→ For the Sauce

05 - 1 tablespoon olive oil
06 - 1 tablespoon Dijon mustard
07 - 1 teaspoon dried thyme
08 - 1/2 cup chicken broth
09 - 1 cup apricot preserves or puree
10 - 1 tablespoon lemon juice

# Instructions:

01 - Heat olive oil in a big pan over medium-high heat. Sprinkle salt, pepper, and cumin (if you're using it) over the chicken breasts. Place them in the pan and cook for 5-7 minutes per side, flipping once, until the chicken is fully cooked and nicely browned. Take them out and set aside.
02 - Using the same pan, stir together the apricot preserves, chicken broth, lemon juice, thyme, and Dijon mustard. Let it simmer gently while stirring once in a while. After 5-7 minutes, the sauce should thicken slightly.
03 - Add the cooked chicken back into the pan. Pour the sauce over the chicken, and let it heat together for another 5 minutes so the flavors soak into the chicken.
