Wash the cherries, remove their stems, and take the pits out.

After you're done cooking, blend the mixture (remember to remove the mint leaves first) and let it sit to cool.

Toss the chopped cherries into a pan, and then add your lemon juice, sugar, and a pinch of vanilla or a few mint leaves. Cook over medium heat for about 10 minutes, stirring now and then so nothing sticks, and the cherries cook evenly.

Pop the cherry mixture into your ice cream machine, and churn it for 15 minutes (or follow whatever method your machine recommends).

Move the cherry sorbet to a container and store it in the freezer. Take it out 5 to 10 minutes before serving, then dig in and enjoy!
