Fresh grated carrots (Print Version)

# Ingredients:

→ Dressing

01 - 3 tablespoons of olive oil (45 ml)
02 - 1 tablespoon of wine vinegar or lemon juice (15 ml)
03 - Black pepper to taste
04 - Salt to your liking

→ Vegetables

05 - 450 g of peeled and washed carrots

→ Topping

06 - 2 tablespoons of finely chopped herbs of your choice (parsley, basil, chives, cilantro)

# Instructions:

01 - In a bowl, whisk together the vinegar (or lemon juice), salt, and pepper. Slowly add the olive oil while whisking until it looks smooth.
02 - Wash, peel, and shred the carrots using a grater or food processor.
03 - Gently toss the shredded carrots with the chopped herbs and dressing. Taste it and adjust the seasoning if needed.
04 - Allow everything to sit for a bit at room temperature or in the fridge before serving.

# Notes:

01 - Stores well for up to 4 days in the fridge in a sealed container.
02 - For a lighter version, use 2 tablespoons of olive oil with 2 teaspoons of vinegar.
