Heat up your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Peel the potatoes and chop them into cubes, then toss them into a bowl.

Pour the olive oil over the potato chunks, then sprinkle on some salt and pepper. Stir until everything’s coated evenly.

Lay the seasoned potatoes on the prepared baking tray in one single layer. Roast them for 30-35 minutes, until they turn golden brown and crispy at the edges.

Once the potatoes are roasted, take them out of the oven. Top them off with slices of Brie right away.

Pop the potatoes back into the oven for another 5 minutes, just until the Brie melts and becomes gooey.
