Brazilian beef sweet potatoes (Print Version)

# Ingredients:

→ For the stew

01 - 1 medium onion, chopped
02 - 2 medium sweet potatoes, peeled and diced
03 - 500g beef stew meat, cut into chunks
04 - 1 bell pepper, sliced into pieces
05 - 2 garlic cloves, minced
06 - 1 can (400g) diced tomatoes
07 - 2 tbsp olive oil
08 - 1 cup beef broth
09 - 1 tsp ground cinnamon
10 - 1 tbsp paprika
11 - 1 tbsp ground cumin
12 - Salt and pepper to suit your taste

# Instructions:

01 - Warm up the olive oil in a big pot over medium heat. Toss in the beef pieces and brown them on all sides for around 5 minutes. Take them out and set aside.
02 - Pop the onion, garlic, and bell pepper into the same pot. Stir them around for about 5 minutes until they're soft. Add in the sweet potato chunks and cook a couple more minutes.
03 - Sprinkle on the cumin, paprika, cinnamon, salt, and pepper. Stir to coat the vegetables in the spices. Then pour in the diced tomatoes and beef broth. Add the browned beef back in, lower the heat, cover it up, and let it gently cook for 45 minutes or so until the beef is tender and the sweet potatoes are nice and soft.
04 - Check the stew and tweak the seasoning with more salt, pepper, or extra spices if you want. Enjoy it warm!

01 - Store this meal in the fridge for up to 3 days.
02 - Letting it sit overnight often makes it taste even better.
