Banana oat pancakes (Print Version)

01 - 1 large egg
02 - 90g gluten-free oat flakes
03 - 2 ripe bananas, sliced into rounds
04 - 1 tsp honey
05 - ½ tsp cinnamon
06 - Mild vegetable oil for cooking

07 - Banana slices
08 - Shredded coconut, pecans, or almonds
09 - Maple syrup

# Instructions:

01 - Blend the oats until they turn into a fine powder, similar to flour.
02 - Toss the banana rounds, egg, cinnamon, honey, and oat flour into a blender. Blend it all up until it’s smooth and creamy.
03 - Heat a little oil in a non-stick skillet over medium heat. Once hot, spoon in about two tablespoons of batter for each pancake. Let them cook until you notice small bubbles forming on top, then flip and cook the other side until it turns golden.
04 - Serve the warm pancakes with some banana slices, a drizzle of maple syrup, or a sprinkle of coconut, almonds, or pecans—whatever suits your taste!

# Notes:

01 - These pancakes are naturally gluten-free as long as you use certified gluten-free oats.
02 - They’re lactose-free and can be made without added sugar by skipping the honey if your bananas are very ripe.
03 - It’s a fantastic way to use up those overripe bananas sitting on the counter.
