Avocado Grapefruit Shrimp Salad (Print Version)

# Ingredients:

→ For the salad

01 - 2 ripe avocados, skinned, pitted and sliced
02 - 2 pink grapefruits, skinned and cut into segments
03 - 1/2 lb cooked shrimp, peeled and cleaned
04 - 1/4 cup chopped fresh cilantro
05 - 1 small red onion, thinly sliced
06 - 1 tablespoon olive oil
07 - Salt and pepper, to taste

→ For the dressing

08 - 2 tablespoons olive oil
09 - 1 tablespoon honey
10 - 1 tablespoon lime juice
11 - Salt and pepper, to taste

# Instructions:

01 - Slice avocados in half, take out the pits and cut them into thin wedges. Peel the grapefruit, pull apart the segments and set them aside. For store-bought cooked shrimp, make sure they're peeled and cleaned. If you've got raw ones, cook them how you like and let them cool down. Slice the red onion thinly for a milder flavor.
02 - Grab a small bowl and whisk the olive oil, honey, lime juice, salt and pepper together until everything's nicely combined.
03 - In a big bowl, gently toss the avocado slices, grapefruit segments, shrimp, red onion and cilantro. Pour your dressing over everything and give it a light mix so all ingredients get coated.
