Avocado Egg Toast (Print Version)

# Ingredients:

01 - 2 slices of whole grain or sourdough bread
02 - 1 ripe avocado
03 - 2 large eggs
04 - 1 tablespoon of white vinegar (optional, for poaching)
05 - Salt and pepper, to taste

→ Optional toppings

06 - Chili flakes
07 - Fresh herbs (like chives or parsley)
08 - Grated lemon or lime zest
09 - Cherry tomatoes

# Instructions:

01 - Toast the bread slices until they’re as crispy as you like.
02 - Scoop out the avocado flesh and mash it up with a fork in a bowl. Sprinkle on some salt and pepper to flavor it.
03 - Heat a pot of water until it’s gently simmering. You can add the vinegar if you’d like.
04 - Break an egg into a small bowl. Stir the water in the pot to create a whirlpool, then carefully drop the egg into the middle. Cook the egg for about 3–4 minutes for a runny yolk, or longer if you prefer it firmer. Repeat with the other egg.
05 - Evenly spread the mashed avocado over your toasted bread.
06 - Gently place a poached egg on top of each slice of bread.
07 - Sprinkle on chili flakes, fresh herbs, or your favorite toppings. Add a squeeze of lemon or lime juice if you want an extra zing.
